500 gramos de vacuno (lo ideal sería conseguir carne de buey de Kobe, pero con la dificultad tanto de encontrar donde la venden como la económica de pagarla, nos conformaremos con vacuno normal).
Algas en polvo (Kombu, Wakame, Nori).
Wasabi en polvo.
Semillas de sésamo al wasabi.
Miga de pan (Panko).
Cerveza.
5 especias japonesas.
Miso.
Nata.
Lechuga roja.
Cebolla morada.
Jengibre laminado en vinagre.
Aceite de sésamo.
Vinagre de arroz.
Sake.
Salsa de soja.
Sal.
Lonchas de queso Gruyere curado.
Panecillo de semillas de sésamo.
ELABORACIÓN
Se mezcla la carne de vacuno y se mezclan con las algas en polvo, una cucharadita de wasabi en polvo, las semillas de sésamo al wasabi, la miga de pan (Panko), las cinco especies japonesas, un chorrito de cerveza y un chorrito de sake, sal y se deja reposar.
Se corta la cebolla morada en rodajas finas que se ponen en maceración de vinagre de arroz (esto se habrá hecho previamente).
Esta cebolla macerada se carameliza en salsa de soja, sin que llegue a endurecerse y se hace una pasta. Se reserva.
En una sartén se pone una pizca de mantequilla y un chorrito de aceite de sésamo para que no se queme la mantequilla y para darle sabor. Se deja derretir un poco y se le añade la nata y la pastilla de miso con verduras, se deja que cueza unos minutos y espese. Se reserva.
Por otra parte la carne y los ingredientes mezclados y amasados, se le da forma cuadrada (no hay que olvidar que para los japoneses el círculo no trae buena suerte, y en su honor las hacemos cuadradas). Con la cantidad de carne e ingredientes pueden salir hasta cuatro hambullirguesas, dependiendo del tamaño que nos guste.
Con esa forma se las pone a la plancha con un chorrito de aceite de sésamo y hacerla al gusto.
Se coge el panecillo, se abre y se distribuye una loncha de queso Gruyere curado (es difícil conseguir queso japonés y opte por un queso fuerte de sabor, aunque el queso es totalmente optativo), se pone la hambullirguesa encima, un poco de la cebolla caramelizada, la salsa de miso y unas tiras de lechuga morada, lavada y cortada en tiras previamente. Se presenta.
