1. Cortar la carne en dados enharinados y sacudidos para eliminar el exceso. Reunir en una cazuela el ajo pelado, el enebro, una cucharada de mantequilla y el aceite.
2. Incorporar los dados de carne, dorarlos ligeramente, regarlos con el caldo, salpimentar y cocer a fuego muy bajo durante 10 min. removiendo de vez en cuando.
3. Lavar dos manzanas, partirlas por la mitad, eliminar el corazón, cortarlas en trocitos e incorporarlas a la carne a mitad de cocción.
4. Lavar las manzanas restantes, cortarlas en gajos sin pelarlas y dorarlas durante 6 min. con la mantequilla y el romero y un ajo.
5. Cuando la carne esté cocida, poner en una fuente y alrededor los gajos de manzanas.
