Se ponen en remojo las pasas y las frutas del bosque en agua caliente y un poco de anis (se puede calentar en el microondas, si es en agua fria hay que dejarlas unas 4 horas).
Se separan las yemas de las claras. Las claras se reservan y las yemas se ponen en un bol junto con el azúcar (se añade poco a poco hasta que blanquee) y se baten enérgicamente hasta obtener una consistencia espumosa.
A continuación se añade la mantequilla a punto de pomada (poner en el micro durante 30 segundos en descongelar), sin dejar de remover. Se mezcla la harina y la levadura y se tamiza. Se va agregando alternativamente la harina y leche. Cuando se vea que la masa se queda como “pelotitas” se añade líquido. Cuando se termine de incorporar la leche se añade el anís. Si queda espeso y necesita más líquido se añade leche. La masa tiene que quedar espesa.
Se añaden las pasas (mejor enharinarlas previamente), los piñones, las frutas confitadas (cortadas bien finas) y las frutas del bosque. Se añade un poquito del agua de hidratar las pasas y las frutas del bosque y un poquito de esencia.
Se baten las claras a punto de nieve y se añaden a la mezcla anterior. Se remueve todo bien hasta que quede una mezcla homogénea.
Se unta el molde con mucha mantequilla y harina. Se vierte la mezcla en el bol y se introduce al horno a 180º durante una hora.
