550 g de harina sin trigo (una mezcla de cebada, avena, arroz y maíz, con o sin centeno)
10 g de sal marina fina
10 g de levadura de panadero fresca
Unos 530 ml de agua caliente al tacto
1 cucharadita de miel líquida
1 molde para pan de 450 g, bien engrasado
ELABORACIÓN DE PAN SIN TRIGO
Mezcle la harina y la sal en un cuenco mezclador grande y haga un hueco en el centro.
Desmenuce la levadura en un cuenco pequeño.
Mézclela con 100 ml de agua y la miel hasta lograr un líquido homogéneo.
Viértalo en el hueco de la harina y mezcle con la suficiente harina para obtener una pasta pegajosa. Incorpore poco a poco el resto de agua en forma de chorrito fino mientras añade la harina con la otra mano; el resultado será una masa pesada, pegajosa y ligeramente arenosa diferente a la masa de pan normal.
Si le parece seca y difícil de extender, añada un poco más de agua. (Si el pan horneado tiene una entalla a un lado, y no encima, ello indica que la masa estaba demasiado dura, por lo tanto deberá añadir un poco más de agua la próxima vez que la prepare.)
Llegados a este punto, la masa no necesita amasarse más.
Ponga la masa en el molde preparado y cúbrala con un paño húmedo, o envuelva el molde con una bolsa de plástico grande.
Déjela reposar a temperatura ambiente unos 20 minutos.
Mientras, precaliente el horno a 220ºC.
Destape el pan, que habrá subido ligeramente, y hornéelo durante 30 minutos, o hasta que esté firme y dorado. Vuelque el pan del molde y póngalo de nuevo en el horno directamente sobre el estante.
Hornee durante otros 10 minutos.
Deje enfriar sobre una rejilla metálica.
Es preferible consumir el pan en el transcurso de 4 días. Una vez frío, puede congelarse hasta un mes.
