ELABORACIÓN DE FRITADA DE POLLO CON TOMATE Y PATATAS
En una sartén con un poco de aceite de oliva, se fríen los pimientos verdes cortados a trozos medianos y se retiran.
En el mismo aceite, se echan los tomates pelados y troceados y se fríen hasta que pierdan toda su agua con un poco de sal y pimienta.
Una vez que el tomate está en su punto, mezclarle los pimientos. En otra sartén, se frien los trozos de pollo hasta que estén dorados con algo de sal y se rocía con vino blanco seco, dejar cocer hasta que el pollo esté tierno.
Cuando la carne esté en su punto, se mezcla con el tomate y pimiento y se le añaden unas ramitas de romero para aromatizar.
Aparte haremos unas patatas fritas, las cuales haremos, pelando, lavando y cortando las patatas, dejándolas en remojo unos minutos para que suelten parte del almidón. Pasados los minutos, las sacaremos del agua, las secaremos bien y las freiremos, en sartén, con freidora o freidora eléctrica. Si las hacemos en sartén o freidora normal, las pasaremos a un plato con un papel de cocina, para absorber el exceso de grasa.
Servimos la fritada en compañía de las patatas. Delicioso.
