2 huevos. 1 para la masa y otro para decorar y dar brillo
120 g de azúcar
Una pizca de levadura en polvo (una cucharadita de las de café)
100 g de mantequilla al punto de pomada
1 cucharadita de pan rallado
Unas hojas de menta (hierba buena)
2 o 3 galletas maría molidas
Una pizca de sal
ELABORACIÓN
Pasar la harina y levadura por un tamiz, dejándolas caer sobre la superficie de trabajo en forma de volcán (en un bol). Colocar en el centro 60 g de azúcar, una pizquita de sal, la mantequilla reblandecida al punto pomada y el huevo. Mezclamos rápidamente con la punta de los dedos hasta que quede una masa lisa y compacta. La envolvemos en un film transparente y dejamos reposar en el frigorífico durante 20 minutos.
Con la ayuda del rodillo extendemos la pasta sobre una superficie enharinada hasta que tenga un grosor de 3 / 4 milímetros. Forrar el molde, previamente untado con harina, mantequilla y otra vez harina. Pasar por encima del molde el rodillo para eliminar el sobrante de la masa. Pinchar la masa con un palillo varias veces por toda ella. Colocamos encima el pan rallado mezclado con las galletas trituradas y una cucharadita de canela.
Quitar la piel y las pepitas de las uvas y colocarlas por encima de la tarta y espolvorear un poco de azúcar.
Estiramos la masa restante y cortamos tiras estrechas que colocaremos encima del pastel formando un enrejillado. Eliminamos masa sobrante y presionamos para fijar la rejilla y la untamos con la yema del huevo. Colocamos la tarta en horno precalentado a 190º, durante 35 o 40 minutos. Retiramos del horno y la untamos con la clara del huevo para que brille.
Para ayudar a que se unifique la crema o el relleno de la tarta y quede más jugosa añadiremos como 3 cucharadas de mermelada de albaricoque .
El relleno se puede hacer de cualquier fruta. Si son frutas duras (manzanas, Kiwis, peras… etc) se echan en una cazuela con 4 cucharadas de azúcar, zumo de ½ naranja, un chorrito de vino dulce y una ramita de canela, se tapa y a fuego medio hasta que la fruta esté muy blanda y con ello rellenamos la tarta.
