1 col rizada de tamaño grande (aproximadamente 1,2 kg)
Sal marina
2 naranjas
Pimienta
4 lonchas de salmón ahumado (aproximadamente 100 g)
Mantequilla para el molde
200 ml de vino suave
100 ml de caldo
2 cucharadas de mantequilla
200 g de nata para montar
Nuez moscada
200 g de arroz de grano largo
Material adicional: palillos de madera
ELABORACIÓN
Descongelar los filetes de salmón. Lavar la col. Separar 8 hojas grandes, quitar el tronco central y cocer en agua con sal durante 3 minutos hasta que se vuelvan flexibles. Colar el agua, pasarlas por agua fría y secarlas bien. Cortar el resto de la col en tiras y retirar el tronco central en el caso de que sea demasiado grueso.
Pelar las naranjas en profundidad, retirando también la piel blanca interior. Hacer un corte en los filetes por el tabique central. Limpiar los filetes, secar y sazonar con sal y pimienta. Colocar cada filete encima de dos hojas de col superpuestas y, encima del filete, colocar unos gajos de naranja y una loncha de salmón ahumado.
Envolver el salmón con las hojas de col, fijándolas con los palillos de madera y colocar los rollitos, uno al lado del otro, en una fuente para horno previamente engrasada. Mezclar 50 ml de vino con el caldo y regar con la mezcla los rollitos de salmón. Hornear durante aproximadamente 25 minutos a 180ºC y durante este tiempo regar una o dos veces con el líquido que queda en la fuente.
Rehogar las tiras de col con un poco de mantequilla durante 5 minutos. Añadir el resto del vino y la nata y sazonar con sal, pimienta y nuez moscada. Cocer tapado durante 10-12 minutos y sazonar de nuevo si es necesario. Mientras tanto, cocer el arroz en agua con sal hirviendo, siguiendo las instrucciones del envase. Servir los rollitos de salmón acompañados con la verdura y el arroz.
