Para la masa – Versión 2, menor cantidad y más liviana
100 g de manteca
1/4 kg de semola fina
1/2 taza de harina leudante
1/2 vaso de agua
2 cucharadas de azúcar
Para el relleno
3 cucharadas de azúcar impalpable
2 tazas de nueces picadas
1 cucharada de canela
1 cucharada de agua de azahar diluida
Si se elige la segunda opción de masa, utilizar la mitad de los ingredientes para el relleno.
ELABORACIÓN DE MAMUL
Disolver la manteca o margarina y agregar el azúcar, el agua de azahar, el agua, la harina y la semola, hasta que se absorba e integre completamente. Dejar reposar la masa en un lugar tibio.
Para preparar el relleno, colocar en un bol las nueces picadas, la canela, dos cucharadas de azúcar impalpable, el agua de azahar y mezclar bien.
Trabajar la masa con las manos y cortarla en porciones del tamaño de una nuez. Ahuecarla con el dedo índice hasta que la masa se vea transparente. Tomar una cucharadita de la mezcla, rellenar la masa y cerrarla con los dedos.
Dar vuelta y, del otro lado del cierre, con una pinza de depilar, pellizcar la masa en forma de flor. Colocar en una placa seca y llevar a horno moderado durante media hora.
Retirar y espolvorear, en el momento, con azúcar impalpable.
