ELABORACIÓN DE LENGUADO RELLENO CON SALSA DE MARISCO
Se coge el lenguado y se le saca la espina, dejandolo en dos mitades, a ser posible en forma de libro (este se lo podemos pedir al pescadero). Cogemos 5 de los langostinos o gambones, les pelamos (las cáscaras las ponemos con un vaso de agua, a cocer en una cazuela, nos servirá para la salsa), y los troceamos junto con las dos barritas de surimi, finamente.
Rellenamos el lenguado y lo cerramos, pasandolo por harina y por el huevo batido, rebozandolo y friendolo con cuidado de que no se nos abra (se puede utilizar algún palillo de madera clavado, para que nos ayude y que retiraremos inmediatamente, en cuanto esté el rebozo hecho), en aceite caliente en una sartén, con lo que conseguiremos que tenga cuerpo y no se salga el relleno.
En una cazuela, pondremos la cebolla picada finamente, para pochar, cuando se esté poniendo transparente, le pondremos un poco de perejil fresco picado y una cucharada de harina, que mezclaremos con la cebolla y el perejil, con la ayuda de una cuchara de madera, para que coja cierto color y pierda el sabor a harina cruda.
Se echa un chorrito de vino blanco y se deja que evapore el alcohol, se añade el caldo de las cabezas, que habremos colado, se le da unas vueltas para mezclarlo todo bien y se introduce el lenguado relleno y rebozado, para que cueza en la salsa unos minutos (al haberse freído en la sartén y estar ya, prácticamente hecho, con 4-5 minutos, será suficiente), añadiendo también, el langostino sobrante y las almejas, que también darán sabor a la salsa.
Se sirve caliente, este rápido y espectacular plato.
Se puede acompañar, como es el caso, de unas patatas panaderas, que se pueden añadir a la salsa, o solo añadirsela por encima.
