Para la masa de crepes, casca los huevos y bate con la varilla. Agrega la harina y un poco de leche y sigue removiendo. Incorpora el azúcar moreno y el cacao. Mezcla bien y vierte poco a poco el resto de la leche sin dejar de remover. Derrite la mantequilla en el microondas durante unos 25 segundos y añade. Sigue batiendo hasta hacer una masa ligera y homogénea. Cuela.
Pon a calentar una sartén al fuego y úntala con un poco de mantequilla (puedes ayudarte de un trozo de papel para extenderla fácilmente). Coloca un poco de la masa y cocínala por los dos lados (ayúdate con la punta del cuchillo para darle la vuelta) con cuidado de que no se rompa. Repite la operación hasta terminar la masa (te saldrán unos 12 crepes aproximadamente). Reserva.
Para el relleno, retira el rabo a las fresas, filetea y saltéalas a fuego vivo en una sartén con un chorrito de aceite. Agrega el azúcar, una pizca de pimienta y un chorrito de vinagre de Módena.
Rellena los crepes con las fresas y envuelve.
Para la salsa, pon a calentar la nata en un cazo. Pica el chocolate blanco, ponlo en un bol y vierte la nata cuando se haya calentado. Espera unos 5 minutos hasta que se funda y deja enfriar en el frigorífico.
Sirve en un plato los crepes negros con fresas y riega con la salsa de chocolate blanco. Espolvorea con una pizca de pimienta.
