2 tazas de verdura picada (utiliza lo que tengas a la mano)

ELABORACIÓN DE ALBÓNDIGAS DE PESCADO
Pica finamente la cebolla y un poco de cilantro (la cantidad que quieras para dar un poco de color a las albóndigas).
En un recipiente mediano coloca la cebolla y cilantro picado, el pescado molido (o picado lo más finamente que se pueda), los huevos, la sal de apio, el orégano y el pan molido. Revuelve todo muy bien, primero con una cuchara de madera y después con las manos, hasta lograr que todos los ingredientes queden completamente combinados. Deja que la mezcla repose unos 10 minutos.
Vierte el caldo de pescado a una cacerola grande y agrega la verdura picada. Deja que hierva hasta que las verduras estén cocidas.
Utiliza las manos para hacer bolas de la mezcla de pescado de un tamaño similar al que tiene un huevo de gallina. (Deben de salir alrededor de unas 18 piezas.).
Coloca cada albóndiga dentro del caldo con verduras. Permite que hiervan suavemente durante aproximadamente 10 minutos o hasta que estén cocidas por dentro.
Sirve tres o cuatro albóndigas por ración en platos hondos, acompañados de una parte del caldo y las verduras. En la mesa coloca un recipiente con mitades de limones y más cilantro picado – además de una rica salsa de mesa, si lo deseas — para que cada persona condimente a su gusto el plato.
