ELABORACIÓN DE SOPA DE TALLARINES FRESCOS CON POLLO
En una cazuela que tendremos al fuego, ponemos el caldo a calentar y echaremos el muslo de pollo sin piel a cocer, dentro del mismo, durante 10 – 15 minutos, la sacamos de la cazuela, le abrimos y le quitamos el hueso y desmenuzamos la carne.
Mientras en una sartén con un chorro de aceite de oliva, pondremos a sofreír el 1/2 puerro muy picado junto con el diente de ajo picado finamente, los salpimentamos y añadimos el pollo desmenuzado y unas ramas de cebollino finamente picadas, les damos unas vueltas envolviendolo todo bien.
Los tallarines de pasta fresca (se podría utilizar también pasta seca pero para mi gusto no queda igual de sabor ni de textura) los trocearemos en tamaño fideo y lo coceremos en el caldo durante 3 minutos al que le habremos añadido el contenido de la sartén, lo rectificamos de sal y cuando pase este tiempo, se le añaden las hojas de apio fresco troceadas y se tapa dejandolo reposar unos minutos.
