ELABORACIÓN DE HORNAZO
Para elaborarlo comenzamos deshaciendo la levadura y la sal en el vaso de vino blanco. En un recipiente echamos los huevos, la mezcla del vino y, por último, el vaso de aceite de oliva. Lo mezclamos todo hasta obtener una mezcla homogénea.
Incorporamos poco a poco la harina, removiendo hasta obtener una mezcla que no se pegue a los dedos. Se amasa y se deja reposar, tapado con un paño húmedo.
Pasadas unas dos horas, se estira la masa con un rodillo, dejándola de un grosor de 3 mm. aproximadamente, y cortamos en dos partes iguales. Colocamos una de ellas en una bandeja de horno, previamente untada con mantequilla y harina, y colocamos sobre ella el relleno. Primero ponemos una capa de lomo adobado, después una de chorizo, una de jamón y otra de huevo cocido, teniendo la precaución de dejar un pequeño borde para poder cerrar posteriormente el hornazo.
Por último pintamos ligeramente los bordes con huevo batido y colocamos la otra plancha de masa. Cerramos los bordes y untamos con huevo la parte superior para darle brillo al conjunto. Es recomendable picar con un tenedor para que al cocerlo salga el aire y no quede hueco por dentro. Lo coceremos al horno, precalentado a 200º durante 35 minutos aproximadamente.
Para que el bollo quede más vistoso y algo más sabroso se puede añadir a la mezcla de la masa una pizca de colorante alimentario de color amarillo, el conjunto resultará más atractivo, a los ojos y al paladar.
Si queremos que el hornazo quede más jugoso podemos meter el lomo sin haberlo cocinado previamente, así evitamos que se seque. Con el calor del horno será suficiente para que quede en su punto.
Para obtener mejores resultados, la levadura que utilizamos para su elaboración debe ser prensada.
Por último, si quieres sorprender a tus invitados con un brillante y dorado hornazo, puedes sustituir el huevo entero con el que lo barnizamos por una yema de huevo batido.
