ELABORACIÓN DE BACALAO CON GAMBONES EN SALSA DE TRIGUEROS Y CORTEZAS DE BACALAO
Empezaremos por conseguir las pieles del bacalao, con un cuchillo bien afilado quitamos la piel del bacalao.
Raspamos con el cuchillo la superficie para quitar los restos de pescado y dejar la piel totalmente limpia. Sólo nos tiene que quedar la piel.
Ponemos la piel de bacalao sobre papel sulfurizado (de horno) para que no se pegue y metemos al horno a baja temperatura (50-60º) hasta secar la piel totalmente. Este proceso puede durar 3-4 horas. Si tenemos ventilador en el horno lo enchufamos, esto nos ayudará a secar la piel antes. De vez en cuando vamos abriendo la puerta del horno para que vaya saliendo la humedad (abrir y cerrar), podemos utilizar una deshidratadora de alimentos, o el sistema mas fácil y económico dejarlas sobre los radiadores de la calefacción, dándoles la vuelta de vez en cuando y nos ahorramos la luz.
Escaldamos los espárragos trigueros, en agua hirviendo con sal y pimienta, durante 2 minutos, los escurrimos, los pasamos por la sarten con un poco de aceite y añadimos la nata, dejándolo cocer unos minutos, y pasamos por la batidora y dependiendo si queremos mas o menos fina lo pasamos por colador o chino. Reservamos.
En una cazuela con agua, sal y el eneldo y estragón, dejamos que hierva y cuando haya vapor colocamos con sumo cuidado el bacalao, sobre el utensilio de vapor, o un colador o espátula si no lo tenemos ya que es fácil que se deshaga, dejamos hacer al vapor junto con los gambones pelados (6 minutos). Emplatamos.
Una vez secada la piel de bacalao la freímos, en una sarten (donde habremos puesto el tocino de jamón en unas gotas de aceite de girasol hasta que se haya soltado la grasa), a fuego fuerte durante unos segundos. Sacamos a un papel absorbente y, aún caliente, echamos un poco de sal gorda o en escamas y un poco de pimentón.
Terminamos de emplatar con el bacalao, los gambones, salsa de trigueros, las cortezas de bacalao y una flores comestibles para dar un toque de color.
