Aceite de girasol, especial para rebozados, que se absorbe menos.

1 calabacín
1 berenjena
1 tomate poco maduro
Harina de tempura
ELABORACIÓN DE SAN JACOBO CON TEMPURA DE VERDURAS
Se cogen las verduras, se lavan y se secan, los pimientos se les quita el pedúnculo y la zona de las semillas y se cortan en tiras, el calabacín, se pela, se le quita las puntas y se corta en tiras, como patatas fritas, la berenjena, se le hace el mismo proceso, el tomate, se le quita la zona del pedúnculo, se le vacía la pulpa, que usaremos para otra receta y la carne, la cortamos en tiras.
Hacemos una tempura, con harina especial para tempura y agua muy fría (también se puede realizar con cerveza fría, pero ya que este plato es eminentemente para que coman los niños e introducirles las verduras en su menú, obviaremos el alcohol).
Mientras habremos puesto, las lonchas de jamón york en una superficie plana, se coloca una loncha de queso en un lado y se cierra como un libro, ayudandonos con unos palillos o mondadientes.
En una sartén con aceite de girasol caliente, pondremos a freír las verduras, en tandas (es mejor, no echar muchas para que se frían uniformemente), que habremos sumergido en la tempura. Cuando estén doraditas y crujientes, las iremos sacando y poniendo en una bandeja, con papel absorbente, así hasta finalizar todas.
Mientras se fríen las verduras, batiremos los dos huevos para rebozar, pondremos harina en un plato y pan rallado en otro, pasaremos los San Jacobos, primero por harina, que queden bien impregnados, para que agarren huevo, después por el huevo, bien sumergido y después por el pan rallado.
Lo pondremos en la sartén y con 1-2 minutos, por cada lado, el San Jacobo, estará listo.
Se sirve uno por persona acompañado de verduras.
Es una forma fácil de que los niños coman verduras, sustituyendo a las patatas fritas.
